Beer Cheese dates back to the 1940’s in Clark County. It was firstbelieved to be made by Joe Allman for his cousin, John Allman. John had a restaurant on the Kentucky River called Allman’s Restaurant.Bob Tabor of Winchester, Kentucky used to bartend at Allman’s Restaurant on the Kentucky River back in the 1970’s. He saw how the beer cheese was made and started making it in on his own. He opened a restaurant in 1984 “The Engine House Deli”and the beer cheese was a hit.It was named “River Rat Beer Cheese” because it was born near the river. Hence the name “River Rat Beer Cheese”.“River Rat Beer Cheese” was marketed for retail sales in 2000 and is in stores all over Central Kentucky within a 100 mile radius.It is available in Hot and Mild varieties. Traditionally served withSaltine crackers, club crackers, celery, carrots or as a pretzel dip.You can also use as a topping on hot dogs, hamburgers or soups.
